One of my favorite foods is Pad Thai, but now that I've gone paleo, peanut based foods are out. I've had a craving for some spicey sweet nutty flavors lately, so tonight I set out to make a paleo version of Satay Chicken. With a few tweaks of a peanut satay sauce recipe, I I hit upon a delicious paleo dish that satisfied my craving.
Paleo Sunflower Satay Sauce
1 cup raw sunflower seeds
1/3 cup water
2 cloves garlic, minced
2 tsp. sesame oil
1 to 2 Tbsp. raw, unfiltered, local honey, to taste
2 1/2 Tbsp. gluten free Tamari
2 Tbsp. lime juice
1/2 tsp. cayenne pepper
1/3 cup canned organic coconut milk
Place all ingredients in a blender or food processor and blend until smooth.
If you're strict paleo, when making satay chicken, cook your chicken first, remove it from heat and then toss the chicken in the satay sauce or just dip chicken in the satay. This is in order to keep the raw honey in the sauce from warming and becoming "cooked".
